Ένα μοναδικό φυσικό προϊόν με πολλές ευεργετικές ιδιότητες και ποικίλες χρήσεις γνωστές ήδη από την αρχαιότητα. Σήμερα χρησιμοποιείται στη φαρμακευτική, τη βιομηχανία αρωμάτων και καλλυντικών την ποτοποιία, τη μαγειρική και τη ζαχαροπλαστική. Η μαστίχα είναι η φυσική ρητίνη του δέντρου pistacia lentiscus var. Chia, το οποίο φύεται μόνο στο νησί της Χίου.
